WE'RE MAKING: CRANBERRY NUT GRANOLA
We're planning a long hike through the National Seashore in Provincetown tomorrow so we need a hearty, healthy start and this granola is just what we need! If you have stayed with us then you know how delicious this is, whether sprinkled over fresh Greek yogurt, or simply in a bowl with milk, this granola recipe is easy, healthy and delicious. Make this over the weekend and enjoy it all week long...
CRANBERRY NUT GRANOLA
3 cups rolled oats
3/4 cup melted butter or virgin coconut oil
1 cup light brown sugar
1 1/2 cups unsweetened coconut flakes
1 cup maple syrup
1 cup chopped pecans
1/2 cup unsalted pepitas (pumpkin seeds)
1/2 cup unsalted sunflower seeds
1/2 cup dried cranberries
Preheat oven to 300 degrees.
Toss all ingredients except dried fruit in a large bowl. Spread mixture on a sheet pan and bake for 1 hour. Turn off the oven and let the granola mixture stand in the oven for one additional hour. Remove from oven and add dried fruit. Mix well and cool completely. Granola should be stored in a airtight container and will last for a week or more.
